First, I apologize for my lack of presence lately. As some of you may know, my husband and I recently bought our first house, and I’ve been very busy between getting moved in and getting everything set up. Easy, Healthy Meal Ideas for People Who Work from Home

It can be hard to eat healthy when working from home,  because people who work from home are often so busy they may not have time to cook time-consuming meals. I recently asked a few people for their favorite easy, healthy meal ideas. Here were the answers I got:

Q. What are your favorite easy, healthy meal ideas: 

A. David Leonhardt (President, THGM Writers)

I often make a huge salad in an oversized bowl – spinach leaves, shredded broccoli, carrots, onion, etc.  I add protein, such as tuna, shredded mozzarella or leftover chicken, then I add spices such as powdered garlic, pepper or basil (or all three!).  It’s easy to eat at my desk.

Fruit salad with cottage cheese in it, as well as thick smoothie-style juice is another favorite (looks like  a mess, tastes like heaven!).  I usually add cinnamon and coriander, and sometimes nutmeg or even anise.

I’m lucky enough to have a lot of fruit trees in my garden, from peaches, to pears, figs, apples… During summer, I often blend my garden tomatoes with the fruits for a very healthy, easy and delicious salad. I don’t need oil, salt, vinegar as the fruits perfume with their juice. Sometimes, I add fresh mint. Today, I mixed black chinese mushrooms with hot apples. I always use different colors and shapes ingredients. The beautiful look is a good way to attract.

I love to make one pot meals. Take a big pot, add in water or broth, about 4 cups or so, add in your pasta, any veggies you want, seasonings that you like. You let all this simmer until the water/broth is almost gone, what is left will be a nice sauce. That’s it, serve with a side salad and bread if you wish.

When I am looking for an easy meal to cook when I am busy it usually comes down to pasta. I take whatever vegetables I have in the fridge; mushrooms, peppers, spring onions, a few tomatoes, broccoli and stir-fry them with a onion and garlic, add a few shrimps, tuna, pepperoni, chicken strips. Put the lid on and simmer. In 10 minutes you have enough liquid that comes ou of the vegetables. In that 10 minutes your dried pasta has cooked.

Starting the day with a green smoothie is simple and super-charges my energy levels – both mentally and physically. Favorite lunch/snack is a small avocado, sliced in half and dressed with sea salt and fresh lemon juice or a dousing of fresh salsa or pico de gallo if there is any in the fridge. I am also a huge fan of home made chicken stock and can’t allow a roasted bird to be tossed without simmering it’s carcass in the crockpot slowly for 24 hours. The other ingredients are as easy as 1, 2, 3, 4: 1 onion quartered, 2 celery stocks with their leaves and 2 bay leaves, 3 carrots peeled and diced, 4 garlic cloves. Submerge all in 12 cups of filtered water plus 1 T. apple cider vinegar, and season as desired.  Your home will smell like Thanksgiving and your gut will thank you for having this stock on hand to sip whenever hunger pangs strike 🙂
